TIRAMISU
Tiramisu is a heavenly dessert combining strong coffee, alcohol and chocolate… a real pick me up!
mascarpone cheese (125g)
double cream (250ml)
handful of caster sugar (40g)
2 shots of amaretto (50ml)
pack of sponge fingers (175g)
cup of strong black coffee
chunk of dark chocolate
Process:
make the strong cup of coffee, pour it into a bowl or dish and leave to cool.
dump the cheese, cream, sugar and liquor into a bowl and whisk until smooth and the consistency of thick double cream.
take the sponge fingers one at a time and dunk into the coffee for just a moment (don’t let go!) before making a layer in a serving dish or glass.
spoon over some of the cheese mix to just cover.
repeat with alternate layers of cheese and coffee-soaked sponge until you have used the ingredients… aim for at least three layers of each.
grate the chocolate over the top, cover and put into the fridge to chill for at least 2 hours. Overnight is better as it gives all the flavours chance to blend.
serve a portion with a few fresh raspberries and sprig of mint for maximum pleasure.
