330ml beer
Vegetable oil, to deep-fry
800g skinless fish fillets, halved into long strips if necessary
salt to season
Lemon wedges, to serve

Tartare sauce

1 cup whole-egg mayonnaise (see above link)
1 lemon, rind finely grated
2 teaspoons capers, drained, finely chopped
2 gherkins, finely chopped
2 tablespoons flat-leaf parsley leaves, chopped
