Cream Filled Ginger Cookies
Ingredients:
½ cup of Shortening
¼ cup of Unsalted Butter, softened at room Temperature
¾ cup of Brown Sugar
¼ cup of Granulated Sugar
¼ cup of Molasses
3 tsp of Ground Ginger
2 tsp of Baking Soda
1 Egg
1 tsp of Vanilla Extract
2 ¼ cups of All Purpose Flour
1 tsp of Cinnamon
½ tsp of Salt
Additional Sugar, to roll them in
For the Filling:
3 oz of Cream Cheese, softened at room temperature
¼ cup of Unsalted Butter, softened at room temperature
2 cups of Confectioner Sugar
1 tsp of Vanilla Extract
2 tsp of Lemon Zest
