4 Firm Fish fillets (snapper or blue eye is great)
1/3 cup chopped parsley
1 cup walnuts (chopped)
1 tsp Dijon mustard
200g sugar snap peas (topped)
150g snow pea sprouts
100g cherry or grape tomato (halved)
Lemon wedges to serve
Extra Virgin Olive Oil
