Blini’s with Smoked Salmon and Scrambled Eggs

For the Blinis:
2/3 cup of Buckwheat flour
½ cup of All Purpose Flour
2 Egg, separated
2 tsp of Granulated Sugar
1/2 tsp of Salt
1 tsp of Rapid Rise Yeast
½ tsp of Dried Mustard
2 Tbsp of Unsalted Butter, melted
1 cup of Whole Milk, lightly warmed up

For the eggs:
4 Eggs,
¼ cup of Whole milk
Salt and Pepper to taste
2 Tbsp of Unsalted Butter

For the remaining Recipe:
4oz of Smoked Salmon
Fresh Chopped Chives
