Carrot Cake with Cream Cheese Maple Icing

Ingredients
2 cups grated carrots (1/2 pound or so)
⅓ cup hot water
1¼ cup sugar
½ cup vegetable oil (canola, safflower, sunflower)
3 eggs
1½ teaspoons vanilla
2 cups flour
1½ teaspoons baking soda
½ teaspoon baking powder
1½ teaspoons cinnamon
1½ teaspoons cloves
½ teaspoon salt
Cream Cheese Icing:
8 ounces cream cheese
¼ cup soft butter
2 cups powdered sugar
1 teaspoons vanilla extract
1 tablespoon maple syrup
1 tablespoon orange zest
2 tablespoons orange juice, if needed
