Chicken Tortilla Soup

2 Tbsp of Vegetable Oil
1 Onion, chopped
3 Cloves of Garlic, minced
1 Jalapeno, seeded and minced
1 Red or Green Bell Pepper, seeded and diced
1 15 oz can of Chopped Tomatoes and Chili
1 15 oz can of Black Beans
6 cups of Chicken Stock
1 Tbsp of Chili Powder
2 tsp of Ground Cumin
2 Tbsp of Tomato Paste
1 tsp of Dried Oregano
1 lb of Bonless, Skinless, Chicken Thighs
Juice of One Lime
½ cup of Chopped Cilantro
2 Large Tortillas, toasted in the oven
