Beef Zucchini Tagine


1 pound / 1/2 kilogram lamb or beef meat
large onions (grated or finely chopped)
1 tablespoons vegetable oil and 1 tablespoons olive oil
3-4 garlic cloves (crushed)
1 teaspoon salt and 1⁄2 teaspoon black pepper, 1 teaspoon ground ginger, 1⁄4 teaspoon ground turmeric
A pinch saffron threads (optional)
Small bouquet of parsley
4 zucchini
1/4 teaspoon of dried thyme
