Chicken Fricasse

2 chicken thighs, skin on
2 chicken drumsticks, skin on
a bowl of seasoned flour
2 tbsp of butter (30g) + plus an extra knob
a glug of olive oil
1 onion
a few cloves of garlic
a large handful of button mushrooms
a glass of white wine (175ml)
chicken stock (200ml)
a sprig of thyme
white rice (300g)
broad beans, defrosted (150g)
double cream (100ml)
1 lemon, zested
a sprig of tarragon, chopped
