Roast Christmas Turkey

INGREDIENTS

1 onion
2 cloves of garlic
1 orange
2 bay leaves
10 peppercorns
brown sugar (100g)
salt (75g)
a few sprigs of thyme

for the stuffing

2 onions, peeled
butter (50g)
a couple of fresh sage leaves, finely chopped
breadcrumbs (120g)
1 egg yolk

1 turkey breast
2 carrots and 2 onions
softened butter (50g)
a handful of parsley, chopped

gravy

1 onion, sliced
1 tbsp of plain flour
1 heaped tbsp of cranberry sauce
