Light Cream of Broccoli Soup

1-1/2 Tbsp of Olive Oil
1 Onion, chopped
2 Stalks of Celery, chopped
3 Cloves of Garlic, peeled and chopped
1 Large Potato, peeled and cut into chunks
6 cups of Broccoli Florets
About 4-1/2 (or more) of Vegetable of Chicken Stock
1/4 cup of Reduced Fat Half and Half
Salt and Pepper, to taste
