Chicken Breasts Braised with Olives

Ingredients:
4 boneless, skin-on chicken breasts
salt, pepper, and cayenne to taste
2 tsp Herbs De Provence (the brand I used contained dried chervil, basil, rosemary, tarragon, garlic, lavender, marjoram, savory, thyme, and parsley)
2 tbsp olive oil
1/4 cup sliced shallots
1 cup sliced olives
1 cup chicken broth
1 lemon, juiced
2 tbsp reserved Kalamata olive brine
1/2 tsp cumin
zest from one lemon
2 tbsp Italian parsley
2 tbsp cold butter, cut in 4 pieces
