Twice Baked Potatoes

2 large Russet potatoes (about 6 ounces each)
¼ cup sliced green onions
2 tablespoons sour cream or plain yogurt
1 tablespoon butter
½ teaspoon salt
¼ teaspoon white or black pepper
½ cup grated cheese, divided
Optional: ¼ cup crispy bacon bits and/or ½ cup steamed small broccoli florets
