Chicken Satay Skewers

For the Marinade
1/4 cup of Lemongrass, roughly chopped
1/4 cup of Green Onions, roughly chopped
1 Red Chili, roughly chopped
2 Cloves of Garlic, chopped
1 Tbsp of Chopped Ginger
Fresh Coriander
2 Tbsp of Fish Sauce
1/4 cup of Soy Sauce
3 Tbsp of Vegetable Oil
1 Tbsp of Brown Sugar
1-1/2 lbs of Chicken Breast thinly sliced lengthwise

For the Peanut Sauce:
1/2 cup of Smooth Peanut Butter
1 Clove of Garlic
1 tsp of Red Chili Paste
2 Tbsp of Soy Sauce
Juice of 1 Lime
1/4 cup of Hot Water
