Lemon Chicken Tagine

2 onions
2 small or 1 large clove of garlic
knob of fresh ginger
1 tbsp of cumin seeds
1 cinnamon stick
pinch of saffron
pinch of cracked black pepper
6-8 chicken thighs, on the bone
1 tbsp of preserved lemon paste
cup of chicken stock (200ml)
handful of green olives
squeeze of honey

to serve

2 courgettes
1 tbsp of sumac
glug of oilive oil
couscous (100g)
2 tomatoes
handful of fresh parsley
few sprigs of fresh coriander
bunch of fresh mint
glug of argan oil
pinch of salt
