Vietnamese Noodle Salad
INGREDIENTS
vermicelli rice noodles (60g)
1 small carrot
1 shallot
½ a small red pepper
handful of sugar snap peas
handful of sliced chinese cabbage
handful of roasted peanuts
1 fresh squid
groundnut oil
Nuoc Cham – dressing
1 clove of garlic
2 birds-eye chillies
1 lime
4 tbsp fish sauce
3 tbsp caster sugar
hot water (150ml)
