1 ½ cups of Cooked White Rice
1 Small Yellow Onion, minced
3 Cloves of Garlic, minced
1 tsp of Cumin
1 tsp of Chili Powder
1 tsp of Granulated Garlic
1 ¼ lb of Boneless Skinless Chicken Thighs, cut into large chunks,
3 Tbsp of Vegetable Oil
½ cup of Chicken Stock
Zest of ½ Lime and Lime Wedges on the side
½ cup of Cilantro, chopped
Salt and Pepper to taste
