Mini Turkey Meatball Pot Pies

For the Meatballs:
1-1/2 lb of Ground Turkey
1 Clove of Garlic, minced
1 Egg
1/4 cup of Bread Crumbs
1 tsp of Poultry Seasoning
Salt and Pepper, to taste

For the remaining recipe:
1 Sheet Store-Bought Puff Pastry, thawed
2 Large Carrots, peeled and diced
1 Large Onion, diced
2 Stalks of Celery, diced
3 cups Chicken Stock
1 cup Frozen Pearl Onions, thawed
1 cup Frozen Peas, thawed
1/3 cup Unsalted Butter
1/3 cup All Purpose Flour
1/2 cup Heavy Cream
2 Tbsp Olive Oil
2 Sprigs of Fresh Thyme
Few Leaves of Fresh Sage
1 Egg, beaten with 1 Tbsp of water to make egg wash
Salt and Pepper, to taste
